Cheese, Cheese, Cheese!

Today, Tom and I hiked to the top of the mountain! We were only 45 minutes away from the very top! :) I felt very accomplished and proud that I endured the hour long hike. When we arrived, we went to a Cheese Factory.
The cheese manufacturer explained to us that between May 10th and October, approximately 80 producers and their families manufacture cheese each day in an artisanal way in copper cauldrons on a wood fire. Tradition and modern technology are harmoniously combined to manufacture hard cheese. Today, more than 6,000 hectares of mountain pastures are exploited. The richness of the flora gives milk its subtle flavor and subsequently manufactured cheese.

Later, we went into the town of Leysin to enjoy fondue at the Fromagerie Restuarant! What an experience! Who would have thought just cheese and bread would fill me up? LOL...
